RECIPE: Cooper’s Dad’s Pizza Soup

INGREDIENTS:
– 3 large cans (or 6 small cans) of tomato soup
– Same amount of water as cans of soup
– 2 tsp garlic powder
– 2 tsp onion powder
– 1 T oregano
– 1 T basil leaves
– 1 lb. Italian sausage – ground
– 1 large sweet onion
– 1 lb. pepperoni link
– 2 T minced garlic
– 12-16 oz. baby bella mushrooms
– (optional) 6 oz. sliced black olives

 

Chef’s note: you can use anything you would use on pizza in this, like banana peppers, jalapenos, garlic cloves, etc.

INSTRUCTIONS:
1. Mix soup, water, spices, and heat (not to boil).
2. Cook sausage, ground to small pieces, add onion, and sauté until translucent. Then add minced garlic for about 2 minutes (not enough to burn it). Also, sauté mushrooms in a little olive oil with salt and pepper – or just add them without sautéing! Both ways work.
3. Dice pepperoni into smaller 1/2-inch pieces (roughly).
4. Add everything to the soup mix, and heat on low for 1-2 hours.

Serve with crusty bread and mozzarella cheese.
