RECIPE: Brian’s Award Winning Salsa Soup
NO IT’S NOT CHILI! And, it’s super easy.
INGREDIENTS:
– Two 16 oz jars of your favorite salsa (I used Mateo’s Medium or Willy’s Sweet Hot)
– Two 15 oz cans of kidney, black, or pinto beans drained
– One 15 oz. can white corn (drained)
– 1.5-2 lbs finely chopped cooked chicken
– 1 C brown sugar
– 1 C BBQ sauce (Sweet Baby Ray’s is good)
– 2 C water
– 1 lager or brown ale
– 1 C freshly chopped cilantro
– sea salt/cracked pepper
– 2 Tsp hot sauce
INSTRUCTIONS:
Throw it all into a large pot (except cilantro – add right before serving) and let it cook for a few hours. This one is always better the next day. Serve with sharp cheddar, sour cream, corn chips on top.
And/or corn bread. Or… Brian’s favorite side… a peanut butter sandwich! (He’s dead serious – you’ll thank him later).
