Aunt Betty’s Scrumptious Peach Cobbler
INGREDIENTS:
– 3/4 cup all-purpose flour
– 1/8 teaspoon salt
– 2 teaspoons baking powder
– 1 3/4 cup sugar
– 3/4 cup milk
– 1/2 cup unsalted butter
– 5-6 fresh ripe peaches (3 lbs.)
INSTRUCTIONS:
1. Cut an X into the skin on the bottom of 5-6 ripe peaches.
2. Place the peaches into Boiling water for about 1 minute.
3. Remove the peaches and place them into an ice bath.
4. After cooling, the peach skins should slide off.
5. Cut peaches into bite-size chunks.
6. In a bowl, add ¾ cup of sugar to the peach chunks.
7. Preheat oven to 350°F.
8. Mix the flour, salt, and baking powder.
9. Add 1 cup sugar, then slowly stir in milk.
10. Melt butter in a deep casserole dish (about 3 quarts).
11. Pour batter over melted butter. Do not stir.
12. Spoon the peach chunks onto the batter mixture.
13. Bake for 1 hour until golden brown on top.
14. Allow the cobbler to cool and serve topped with whipped cream or vanilla ice cream.
