RECIPE: Home-Grown Garden Fresh Bruschetta
INGREDIENTS:
– 4 Tablespoons olive oil
– 5 Cloves garlic, finely minced
– 2-pints grape tomatoes halved lengthwise (use different varieties for more flavor & color)
– 1 Baguette or other crusty loaf of bread
– 1 Tablespoon Balsamic Vinegar
– 16 -20 whole fresh basil leaves
– Salt
– Fresh Ground Black Pepper
– 1 Stick Butter
INSTRUCTIONS:
1. In a small skillet, over medium-high heat, add the oil and then the garlic. Stir for about a minute. Remove garlic when golden but before it turns brown. Pour the garlic and oil into a mixing bowl and allow it to cool slightly.
2. Add the tomatoes, balsamic and 15-16 basil leaves to the bowl. Season with salt and freshly ground pepper. Toss to combine, and then add more basil and salt, to your preferred taste. Do not over salt!
3. Cover and refrigerate for 1-2 hours.
4. Cut the baguette into diagonal slices.
5. Melt the butter in a large skillet and grill the bread on both sides, making sure they’re nice and buttery. Cook until golden brown on both sides.
6. To serve, stir the tomato mixture and then spoon generously over the slices of bread.
